I've been looking into a lot of raw/vegan recipes lately and decided to whip up a raw/vegan pecan pie! It turned out so delicious I had to share the recipe. Let me know if you try it out and if you'd be interested in more raw recipes!
3 cups pitted dates
2 cups walnuts
1 cup unsweetened coconut flakes
1 cup pecans
1 cup raisins
pinch of vanilla bean (or 1 tsp vanilla)
1/3 cup coconut butter
1 tsp nutmeg
2/3 cup water
To make the crust, blend dates, walnuts and coconut flakes in a food processor (or heavy duty blender) until the mixture is moist and there are no large chunks. Pour into a pie dish and press with your fingers to even out the crust.
For the filling combine the pecans, raisins, vanilla, coconut butter, nutmeg and water in the food processor and blend till smooth. Pour batter over the crust and place the pie in the freezer for a couple hours or overnight.
