Although I'm not vegan, I try to keep my diet mainly plant based. It's simple and healthy. Today I decided to document my food. Half way through I noticed that everything I was eating was vegan so I continued with the vegan diet for the day! Do you have a specific diet? Vegan, vegetarian, paleo etc? Started the day off with a glass of lemon water followed by a green peanut butter smoothie. Its important to keep your body hydrated and lemon water is great for your immune system, aids digestion, gives you an energy boost along with many other benefits. Green smoothies are an awesome way to get your greens in without having to really taste them. This smoothie is my personal favourite and you can find the recipe here.
For lunch I went with avocado and tomato on toast. The bread I used is Silver Hills Squirrelly bread which is vegan, organic, high in fibre and no GMO. Also topped this off with a bit of pepper for more flavour.
Had a couple mid day snacks... handful of grapes, Jax Coco chocolate coconut water, and an apple with peanut butter.
I'm lazy when it comes to dinners so I opted for a simple meal of roasted cauliflower. I used about 3/4 of a head, a bit of olive oil, garlic powder and pepper. Found it a bit dry and wished I had some sauce...I'll be on it next time aha.
Ended up having some yogurt with strawberries + a DQ blizzard (whoops) as dessert but lets pretend that didn't happen ;)
